Homemade Strawberry Pie Recipe with Oatmeal Crumble

Today let's talk about another pie.
I'm like the crazy pie lady but I'm obsessed.
I love making pie.
And so today I wanted to show you how to makemy strawberry pie with oatmeal crumble topping.
So I don't know when I became the crazy pielady, but I actually think I blame my family.
Growing up, we never had cakes or brownies,we just, like, always had pie around.
I grew up in Florida, which isn't the southbut I think it has that southern influence
in that love of pie.
So I've grown up and I just love making pie.
So today is my strawberry pie and it's supereasy.
Spring is here and strawberries are abundant,so it's a perfect time to make a strawberry
pie.
So I've got about a pound and a half of strawberriescut kind of very thinly.
You can cut 'em however you want, but I justcut 'em really thinly.
And a great way to tell how much filling you'regonna need in your pie plate is to actually
fill it beforehand without any kind of crustor crumble on it.
That way you'd know exactly how much willfit in there.
So to my strawberries, I'm gonna add halfa cup of brown sugar, and then I'm gonna add
a pinch of salt.
It's a super easy filling.
But don't forget to put the salt in, it kindof compliments all the flavors.
And then we're gonna add the zest of one lemon.
Just gonna zest it right on in.
So today I'm using a Meyer lemon because that'sthe only lemon I had in my kitchen, but it's
up to you, you can use a Meyer lemon or youcan use a regular lemon.
Do you want like a little bit of acidity tocut through the strawberries?
And when you're grating regular lemons, makesure not to grate too hard because, well this
is a Meyer lemon so it's not gonna be as tart,but the white part of the lemon we call the
pith is actually really sour, so you wannakind of try as hard as you can to avoid that.
And then we're gonna cut this lemon and justsqueeze it right in.
I like squeezing it into my hand, and thatway it catches all the lemon seeds.
Okay, we're gonna mix our strawberry mixtureand let the sugar macerate the berries for
a couple minutes.
So while my strawberries are macerating, let'smake the oatmeal crumble.
So you basically just can do a double cruston this pie, but I like the kind of crumble
on top and then you get to see some of theberries bubble up.
But again, if you just want it to roll outand do either a lettuce top or just a regular
double crust, that works, too.
I've got three-fourths of a cup of rolledoats, half a cup of brown sugar, again, you
could use granulated sugar if that's all youhave, and then three-fourths of a cup of flour.
Let's just mix this together, get everythingincorporated.
And then a pinch of salt and six tablespoonsof melted butter come straight on in, and
then give this a stir.
And you kind of want it to be like a littlechunky, but kind of very well incorporated.
Sometimes it's just easier to use your hands.
Okay, perfect.
So my strawberries have been macerating, I'mgonna add a quarter cup of cornstarch.
The cornstarch is really gonna help to kindof solidify the pie.
Berries have so much liquid in them, by addingcornstarch, it kind of makes it easier to
eat and kind of more solid.
Okay, so let's assemble the pie now.
I've got a nine inch pie pan that I've linedwith one round of pie dough.
I'm gonna link below my favorite recipe forpie dough and I have a video that goes with
it.
So I've lined the pie pan and I'm gonna addin the strawberry mixture, flatten it out,
and then we're gonna add the topping.
So this makes a lot of topping, I like a thickkind of oatmeal crumble on top, but you could
half the recipe if you just kinda want a thincrumble.
But I like the more the merrier, in my opinion.
And then just put it right on top.
I like to keep kind of an inch or half aninch border, that way you can see what's inside.
Okay, one final thing before this goes into the oven, I've got an egg wash.
My egg wash is one egg mixed in with abouta tablespoon of cream.
This is gonna help to evenly brown and kindamake that crust golden brown.
And then I'm just using a pastry brush andwe're gonna gently go over the crust.
You could also add rhubarb to this pie, justmake sure to up your sugar because rhubarb
is really tart.
But rhubarb is kind of the quintessentialspring fruit and that goes really well with
strawberries.
So my pie is ready.
I've got a 350 degree oven, and this is gonnago in for about 1 hour.
Okay, so my pie is out off the oven and Ilet it cool overnight, and that looks amazing.
It's really important to let your pies coolovernight or at least like four hours, that
way it kind of helps everything come togetherand prevents, like, a soggy pie, because no
one wants a soggy pie.
So it smells amazing, I tented it with foilabout halfway through while I was cooking
it, just because I didn't want the top toget too brown.
So I am ready to dig in.
If you all weren't here, I'd actually justtaste it straight from the pie, but we're
gonna be civilized today.
I mean, look at this, that crumble toppingis just dreamy and those strawberries are
perfectly cooked, and yummy, and delicious.
I cannot wait to taste it.
So you can't have pie obviously without icecream, so I'm gonna put a scoop of vanilla
ice cream and them I'm gonna taste away.
Okay, so let's give it a taste.
It's such an amazing pie.
It's one of my favorites, like, definitelytop five of my pie, and that's saying a lot
because I love pie.
The strawberries aren't too sweet and youcan still taste kind of the strawberry essence,
they're not kind of overwhelmingly sweet.
And that oatmeal crumble on top just addsthe perfect texture.

In a medium sized bowl combine the strawberries, 1/2 cup brown sugar, pinch of salt and the juice and zest of 1 lemon. Stir to combine and allow the berries to macerate for about 20 minutes. In another small bowl combine the rolled oats, the remaining 1/2 cup brown sugar, flour and pinch of salt. Stir to combine. Add the melted butter and mix thoroughly. Set aside. Add the corn starch to the macerated berries. Assemble the pie by filling the unbaked pie dough with the strawberry mixture. Top with the oatmeal crumble. Brush the sides of the pie with the egg wash and bake pie for 1 hour or until th filling is bubbling. Let cool for at least 2 hours or preferably overnight. Serves 6 to 8.
